To make nuclear bombs have longer-lasting effects, the ‘Radiation Kills!’ mod is worth a look.
It adds passive population debuffs to states that have been nuked, as well as global effects the more bombs get dropped.

A fun challenge to do with a couple of friends is to try and contain Germany as France, Poland and Czechoslovakia. No AI allies allowed!
To increase the challenge you can buff Germany with he sliders, and/or add a hostile Italy into the mix
