If you completely disable the ‘Launcher Workaround’, are you still missing the ‘x86’ directory in C:\Steam\steamapps\common\Warhammer Vermintide 2\launcher?

There was an issue with Penlight Lua Libraries, however this should be resolved very soon!
It’s a bit of a stab in the dark, but perhaps it’s worth trying Verify Integrity of Game files -
This is related to Penlight Lua Libraries mod.
It was briefly unsanctioned after a small issue with an update not getting along with EAC. I believe this should be fixed very soon!

“Deleted from the workshop” usually means the mod creator has removed or unlisted the mod.

The mod author uploaded an updated but unsanctioned bundle with the old certificate. This makes EAC unhappy as the bundle signature does not match the one in the cert.
I've gone ahead and manually removed the Sanctioned tag so you should at least get a warning when trying to launch with it enabled. Furthermore, I've reached out to the mod author (prop joe) to see if I can help getting it sanctioned.

Hmm, we’re having some difficulty reproducing this our end.
Could you please launch the game using the bypass launcher workaround, attempt to connect to a game/friend and then provide us with your console log from the session? This would let us see what’s happening under the hood and could really help

Hm okay. It’s possible for that software to have been added to your startup programs.
Next train of thought… are you currently using any mods? If so, can you try disabling them and see if the issue persists?
