No need to destroy tanks, focus on softer targets - AAA and open top SPG.
You can also try to do it attacking coastal fleet in Naval Battles.

One of the functions of this restriction is to "force" players to play more than 1 vehicle. Without it, you would have more and more battle with players who simply "run" through tech tree. As Eftwyrd said, if pilot is still alive, he has ability to control aircraft (even aircraft that is considered beyond repair). It's not a bug, but intentional game mechanics.

The chassis on the STA1/2 is quite long. Generally good handling in rough terrain (Not nearly so much 'bounce' that you may experience on shorter chassis), but the 'around-town' handling will feel sluggish. Additionally (You may have noticed, maybe not), the gunner optics zoom level on the A1/A2 is high. Very, very high. 8x (low) and 16x (high). Superb for long distance, but for my opinion, too much for distances below ~500m.

Both 61/A3 are on a shorter chassis, have +150 HP. (650, vs 500, approximately the same weight). One is autoloading, 6s vs the ~7-10s for the non-autoloading. Both have 4-8x zoom, much more comfortable at closer ranges.
