[2022] AC Valhalla can't change/save graphics settings

Hello,

I've recently bought the Omen 15, with AMD Ryzen 7 4800H and Nvidia RTX 2060. I can't change the graphics settings seems like, as it always stays what was selected by the system 1st time.
To explain, when I first launched AC Valhalla on my laptop, the settings were auto selected to 'High', however, when I changed the settings to 'Low' or 'Very High' for testing, the settings went back to 'High' again after the game restart.

I have tried tweaking the settings on Nvidia Control panel and set the battery performance to max(always play plugged in).

Please advise why the game(of if the system) wouldn't let me change the graphics settings at all?
