This bug seems to still be around... i pumped all my stats into Charisma and after ML3 and becoming a Lich I still have a paltry 54 hp lol

Not completely. Some of the problems aren't too hard to check on a clean version.

I submitted tons of bug reports. On one hand, you're probably right -- Owlcat probably ignores bug reports with mods.
On the other hand, I absolutely do not have the patience to play the game without them. They're too integral to the experience at this point, like Skyrim with SkyUI.
Except for the stuttering, I feel very confident that most of these issues were not caused by mods. The game is held together by the coding equivalent of bubblegum and twine. I'm certainly not going push its limits.
We don't always ignore reports with mods, but their presence makes it harder to figure out what causes the problem, and sometimes makes it impossible to actually launch the save on the test machine.

So they'll abandon the WOTR console release to focus on that Warhammer IP?
At some point we had to refocus our efforts to WOTR, indeed, but the studio has grown bigger since then. PF and 40k are now separate teams that don't take away resources from each other.
With all the data and knowledge from KM console release, we're hoping to deliver a better experience with WotR. It's important to note also that unlike Kingmaker where the console edition was more or less a final accord, WotR still has a long way to go with at least 3 more DLCs to be released, and will have a much longer support period. So even if issues arise (I wish they wouldn't, but in a game of this scale some are inevitable), there will be time to deal with them.
Will there be DLCs with those tho? I would gladly pay money for a series of "mini" DLCs that add new races, classes, deities (empyreal lords, green faith), companions etc. Pathfinder offers just so much unique storytelling and world building, it would be great to see more of that in the game.
There's at least 3 more DLCs of Season Pass 2 to go. I can't share details yet, but you'll definitely find something you seek there.
And if these will have a good reception, who knows, maybe we won't even stop there. Don't take it for granted yet, but we all want to be optimistic, don't we? :)

Well, this does look bold, quite so! In theory this could make a cool adventure story / fanfic about parralel realities that we could gladly share when it's complete. I shudder at the amount of dedication required though, so it's not something I'd force someone to do ^^

Yup that is correct.
I'll pre-order when more info is released on the EE additions and changes. A new class? A new race? A new companion? Those were added to Kingmaker in its enhanced edition.
There will be a handful of UI QoL improvements, some late game content for mythics and photo mode, plus a lot of bugfixes and various tweaks. No new races/classes/companions, these are more fitting for DLCs.

Is this actual cut content or just wishful thinking? Your link seems to be about a completely different (card) game and doesn't have anything to do with WotR. Do you have any source for the claim that Owlcat cut it from the game to "make the pacing of the game faster"?
It was never planned to have this in the game.

On topic, sadly I can't reveal much more detail than what was already said, for now. Except that you seem to have missed that there will be a photo mode and some QoL improvements.
Not gonna lie, compared to KM's and WOTR's contemporaries feels like Owlcat really have been neglecting druid, not really in regards to gameplay but more in the rp department, there are very few opportunities in either game to act like a druid...
I think the larger issue is a class is literally just a bundle of abilities feats and spells you get in these games with basically no identity at all associated with picking druid, cleric or other traditional roleplay heavy classes.
If they end up making another PF game I hope they'll address this. It would really be the icing on the cake.
There are still many things that we'd love to implement at some point. Considering there's a long journey ahead even for WoTR, who knows? :)
