Do you have any controllers attached to your PC? Not being able to move in carts seems to often be caused by that and removing the controllers typically fix it.
Hard to answer, the honest answer is probably no - but simply due to us not being able to know what kind of singleplayer experience you prefer and people set vastly different config settings for their personal taste. No Collab for some people is too fast, for others still too slow. You will want to play around with the settings to find what you actually have fun with, but Eco does allow that, yes.
Double width roofs?
Have roofs with a width of at least two:
AAXX
AXXA
XXAA
You need to place at least one object of a specific room type into the room and may at the same time not have objects of other room types or objects that are considered industrial. (Most work tables, except some kitchen tables) Ecopedia has a list on what objects are for what room.
