Unfortunately an EA account can only ever be linked to one Amazon account in its lifetime. So while you unlinked the old one and can relink that again if you want, you won't be able to link a new Amazon account. We have some more information in this article.
If you just wanted to make 100% sure about your linked accounts, you can log in here with your EA account details, and it'll show you everything you have linked.

An EA account can only ever have one of a particular type of account linked to it in its lifetime. So since you've already had an old PlayStation account linked, you won't be able to link a new one (although you can always relink the old one again).
Unfortunately I can only really recommend making a new EA account and linking your PlayStation account there instead.
