Your best bet is to delete the steamapps/stellaris/ folder, (not the one in /documents/) and then right click Stellaris > Local Files > Verify Game Files, and be sure you're not opted-into any Betas (in the Steam Library, it should say "Stellaris" with nothing in brackets)

Since it's update time again, its time to remind everyone that if you're experiencing crashing issues, the first step to try is disabling your mods:

In the Paradox Launcher, Click Playset, and click Add New Playset, enter the name "No Mods". Do not add any mods to this playset, and run the game.

If you're still experiencing crashing issues after this, in the Launcher, go to Game Settings and choose "Borderless Fullscreen" or "Windowed" video mode.

If you're trying to play a 3.4.5 save on 3.5.1, you can roll-back to the previous version:
Right Click Stellaris, Go to Properties, Betas Tab, and choose "3.4.5 Rollback" from the dropdown.

If none of these solve your problem, you can go to support.paradoxplaza.com and open a ticket, and Customer Support will be able to help you further!

Depending on how big the mod team is, how big the patch hits the mod (let's say you have a flag mod, it won't be affected by a remake of armies and ground combat, but a new method for creating those flags would wreak havoc) and how busy the modders are in real life, you could look at different scenarios and ETAs. Sounds like you're using out of date mods, or opted-into an old beta branch.

Right-Click Stellaris -> Properties -> Betas tab, the drop down should say "None"
Turn off all your mods, and verify your local game files
Right-Click Stellaris -> Properties -> Local Files, and Verify local files.

Reload the game and see if the issue persists, if it does go to support.paradoxplaza.com and open a ticket, and Customer Support will be able to help you fix this problem.

Be sure you're using notepad++ or visual studio code to modify the defines file, as regular notepad will save text files in the wrong format.

Does the game crash without loading your modded defines file? If so, in the launcher go to video, and choose borderless fullscreen or windowed video mode.

I came here to say this. Deficit situations resolve faster with a positive income than simply having a large stockpile, and the more positive your income the faster they resolve.

The deficit penalties hanging around after the deficit is resolved represents the time it takes for your industries, supply chains, etc. to correct themselves after they had their supplies cut off. -20% combat damage, for instance, could represent the loss of morale from your ship crews not getting paid for several months, or the lack of supplies caused by your empire unexpectedl... This is not accurate. There is no crossplay between PC and the PlayStation Console. The crossplay in the launcher allows Steam players to play with players who bought the game on GoG/Microsoft Store. These people are still playing on PC.

In the launcher, go to Game Settings and choose Windowed or Borderless Fullscreen. If that doesn't work, try disabling any mod you might be running.

If none of those things work, go to support.paradoxplaza.com and open a ticket.

You can disable L-Gates in Galaxy Setup as of 3.4.4. Enjoy!

In-game, if you go to Settings and then Gameplay, there is an option to turn off event auto popups. This will cause events to make an exclamation notification along the top of your screen, then you can pause and read them at your leisure. (Don't wait too long, as many events will time out and pick the default option after 30 days).

There are also options under the gameplay settings for event auto pause (turn it on for all events), and auto unpause (turn it off, and manually unpause when you're ready), that will make your gameplay experience a little easier, and less overwhelming.
