I can see that the saddle looks slightly darker and the horse also looks darker, however it is difficult to tell as it is night time in the game. Could you please provide another video during the daytime?
In the video could you also enter photo mode and look at the horse closer up.
Can you also provide links to the videos where you have seen the horse look whiter than in your own game.

As mentioned in previous posts this is not a bug. The cursed symbols must be broken before the last cursed symbol containing the rune stone can be broken and then the rune stone can be collected.
For further assistance please check for a walkthrough online, there are several videos on YouTube available.
If after checking the walkthrough you feel that you have encountered a bug then please provide a video to demonstrate this.

If it does can you confirm if you are able to load any of your saves or does it still freeze and you are unable to do anything?
